Beat the system and eat right
Ingredients:
- 1/2 medium beet, peeled and steamed
- 1/4 cup black beans
- 2 tablespoons agave nectar
- 2 egg whites
- 2 teaspoons vanilla
- 1/4 cup extra virgin coconut oil, liquid
- 1/2 banana
- 1 cup gluten-free flour mix
- 1 teaspoon baking soda
- Pinch sea salt
- 1/2 cup sucanat or rapadura sugar
- 1/4 cup organic cocoa, sifted
- 1/4-1/3 cup dark chocolate chips
Preheat oven to 350-degrees
In a food processor, put beets, beans,agave, egg whites, vanilla coconut oil, and banana. Process until smooth, scraping down the sides for consistency.
Combine flour, baking soda, salt, sucanat, and cocoa powder in a large bowl. Add the beet mixture. Stir until well combined. Fold in the chocolate chips.
Spoon onto baking sheet. You can shape them into circles and flatten slightly; they won’t necessarily flatten much unless you do it. Bake for 9-11 minutes; tops should crack by this time. Makes about 20 cookies.
Serve warm with ice cream or chill.
Store in the refrigerator for a ready-to-eat cool treat.
