Banana-Corn Battered French Toast with Healthy Streusel

I love sinking my teeth into French toast. It is like having dessert and I usually reserve this sort of thing for the weekend, but any day will do when it’s healthy and satisfying. You will not be hungry for a while. Be sure to make enough for your family or they’ll be jealous.

This recipe uses sprouted grain bread instead of refined bread. Any drawbacks you may think exist from using thin little sprouted grain bread  versus thickly sliced French bread will slowly leave your mind as you realize all the flavor and texture is multiplied when battered with corn flour, topped with banana, streusel, and real maple syrup.

  • 2 bananas
  • 2 egg whites
  • ¼ cup organic cornmeal
  • ¼ cup spelt flour
  • ½ teaspoon baking powder
  • 6 tablespoons soy or nut milk
  • ¼ teaspoon cinnamon
  • 1/8 teaspoon dried ground ginger
  • 8 slices sprouted grain bread
  • 2 teaspoons extra virgin coconut oil
  • Maple syrup

Purée one banana with egg whites, cornmeal, flour, baking powder, milk, and spices. Heat a griddle over medium heat. Put 1 teaspoon oil per four slices bread on griddle and spread to coat using a heat proof silicone spatula. Dip each side of bread in batter or spread batter on the bread with a spatula. Cook 2 minutes per side. Lower heat as necessary to prevent toast from burning.

Slice the remaining banana to top your toast. Sprinkle with streusel (recipe below), and drizzle with maple syrup.

THIS IS HEALTHY!

Yeah, the toast is already good at  this point, but it gets better as i told you . Adding more texture and taste is the key. 

NOW ADD: more: MINERALS, VITAMINS, PROTEIN, HEALTHY FAT, AND SUPER FLAVOR!

Sunflower flax streusel

Yield about 1 cup

¼ cup plus 2 tablespoons sunflower seeds

2 tablespoons golden flax seeds

2 heaping tablespoons pea protein powder or shredded coconut

1 tablespoon extra virgin coconut oil, melted if hard

¼ teaspoon cinnamon

1 tablespoon maple syrup or finely chopped dates or prunes

Put flax seeds in a mini food processor or bullet style blender; process until fine but not pasty. Add the 1/4 cup sunflower seeds, protein powder, coconut oil, cinnamon, maple syrup or dates; pulse until crumbly and soft. Stir in the remaining sunflower seeds.
