Creamy Vegan Hot Chocolate

On a cool night when everyone is asking for cocoa; sort of like on a hot night when everyone asks for ice cream, I do not like to give in to the store-bought treats. they are filled with denatured ingredients, with pesticides, hormones, preservatives, trans fats and artificial flavors and colors. I mean why does hot chocolate mix have to have hydrogenated oils? Give me a break!

This version cuts out the dairy milk altogether and leaves you with a satisfying antioxidant cocktail with protein, minerals and vitamins.

Change it up and try a little peppermint extract…it’s very good!

Creamy Vegan Hot Chocolate

This is a satisfying, healthful comfort food.

Serves 4

2 cups filtered water

3 ounces really dark organic chocolate

3 tablespoons cocoa powder

5 tablespoons sucanat or rapadura sugar

1 teaspoon hazelnut extract

1 teaspoon vanilla extract

3 cups filtered water

½ cup cashews

1 cinnamon stick

Put water, chocolate, cocoa powder, and sucanat into a saucepan over low heat. While the chocolate melts, put cashews, water and cinnamon into a powerful blender; Blend on low for 1 minute; switch to high speed for another 30 seconds to a minute. Mixture should be completely liquefied.

Once chocolate is melted, stir in hazelnut extract, and vanilla extract; cook 1 more minute. Stir in the milk.

When you add the blended cashew mixture to the hot chocolate, all the yummy froth rises to the top.

Cook for a few minutes or until as hot as you like it. You can also blend the cocoa to build up the froth a little more.

Here, the cocoa is served with whole grain anise biscottis
