You want cocoa, and yet you want a pumpkin dessert. That was me tonight, so I combined the two flavors into a satisfying guilt free treat that nourishes and supports my efforts for health and fitness.
1 cup almond milk, soy milk or other dairy-free milk
2 tablespoons pumpkin puree
1 tablespoon cocoa powder
Pinch pumpkin pie spice
1 teaspoon Decaffeinated Instant coffee (I like Mount Hagen organic Cafe)
2 packs stevia or liquid stevia, to taste
Heat almond milk, pumpkin, cocoa, pie spice and coffee in a small saucepan until it’s as hot as you like it..Sweeten with stevia. Blend in a magic bullet or blender to give it a frothy top. Pour into your glass. Sift with cinnamon and/or nutmeg.
